1 c. cooked couscous
1 can garbanzo beans
1 medium each tomato, carrot, cucumber, purple onion diced
2 t. minced fresh parsley
1/4 c. red or white wine vinegar
1 T. olive oil
1 t. dried oregano
1/8 t. black pepper
Stir together in large bowl, cover and chill over night.
