Cooking spray (organic available at the commissary)
2 large sweet potatoes cut into wedges (with or without peels)
Salt & Pepper to Taste
Preheat oven to 400 degrees F.
Coat a large baking sheet with cooking spray. Arrange potato wedges on prepared baking sheet in 1 layer and coat them with cooking spray. Sprinkle potatoes with salt & black pepper. Roast for 30 minutes, until tender and golden brown.
If you toss your potato wedges in a little olive oil and garlic and onion, then spread them on your baking sheet, you get Arin Krin style fries. I put them in a skillet with a little oil, salt, pepper and more garlic and fry them a little that way to make the outside a little more crisp.
Just made these tonight. Did them in olive oil & salt/pepper. YUM!!!!
I have made these sweet potatoes( the orange ones) before when I was in the states however I can’t find then in Okinawa. Do you deliver those? If so,what is the price of a bag full? I would be extremely grateful if I could purchase some.
I look forward to hearing from you.
Thank You-
Michelle
Michelle, email me at SophiaLauterbach@gmail.com and I can give you directions to a great market just outside of Foster that sells HUGE bags of sweet potatoes.
Michelle — I’ve only ever seen the white and the purple sweet potatoes here — but good luck!
